Shopping list - Please help me with recipes for what I've bought

I've completely altered my diet and apart from salad, chicken breast & veg, fish, peas and rice with fruit for snacks... I don't know how to make my food more interesting. I'm not a good cook so preferably want it basic or easy to learn. I only have a portable hob and a microwave/grill/convection oven combo (just in case).

Almond milk and soya milk (cut out dairy for my skin and potential allergies)

Veg
Asparagus
Broccoli
Cauliflower

Carrot batons

You could make smoothies with the almond and soya milk, loads of recipes on t'net

Tossed salads with a squeeze of lemon juice and a small dribble of olive oil

Here's some things I'd make with that lot:

Pan-fried/grilled salmon fillets, sweet potato puree, steamed green beans with a sweet lemon sauce (with a ton of zest through it to make it really zingy and I'd chuck in some chilli too).

Broccoli soup (using the yoghurt as a cream substitute)

I'd do a salad with a yoghurt based dressing and toasted pumpkin seeds.

Mushroom and celery rice, grilled chicken and asparagus

A quiche might be nice if you are allowed pastry? As would a fruit tart with yoghurt and toasted almonds

Half a bagel, toasted, then spread with horseradish.
Dry fry a slice of smoked salmon until opaque and add it to the bagel,
top with an egg (poached, fried or scrambled)

I'd also suggest stir fries, curries and tomato and pasta dishes. Another healthy food to consider is tofu and what you can do is use the ingredients that you have listed with sauces in jars, tins and packets and with rice, pasta, noodles, pitta bread or baked/microwaved potatoes.

I usually poach my salmon in butter, milk and parsley. It takes about 7-8 mins, depending on the size of the fillet, of course. I then use corn flour to thicken the sauce at the end. Usually serve with potatoes, carrots and peas.

Vegetable curry? It's quite easy just stick your chosen veg in a pan (I like onion, garlic, cauliflower, runner beans, tinned tomatoes, pepper, celery) with a tablespoon or 2 of curry paste, stock and seasoning. If you have curry paste that will be ok, just stick it all in with whatever veg you want and have with rice.

Frittata? Like omelette but thick and you finish it off in the oven, again whatever you like in there, potato, ham, cheese (if you have it) etc

Roasted sweet potatoes (skins off and into cubes) are lovely, could do them, salmon and spinach

What a coincidence, I found this website earlier and it's a life saver! I will try to make almond milk next week!
