Does anyone else cut up & fry their left over boiled potatoes from the night before or is it just me? delish especially with a fried egg too

Yes, sometimes. Usually a hash or bubble & squeak.
Or I deep fry them to make chips.

I don't mind snacking on them cold either.

I sometimes fry a few bits of chorizo leaving the spicey oil then add the mash with finely chopped scallions, very tasty.

I had some today !

I sliced them up and fried them with curry powder with some pork, cabbage, half a courgette, onion and garlic.............

Nice curry !

I often have potato in curry and not just leftovers, i boil them specially to add to curry.............I stick them in the same pan as the rice then fish them out with a spoon when they're cooked

I tend to boil extra potatoes for dinner on a Friday or a Saturday for the express purpose of having fried spuds with bacon or egg or beans (or all three!) for a weekend breakfast.

We boil spuds just so we can use them for fried potatoes, normally boil them in the morn so they are cold ready for frying. Love them with a fry up, corned beef & beans, a salad....the list is endless

Use up leftover carrots etc from the Sunday dinner as well , mash them together and fry them up , spot on with leftover roast meat ...

I used to, don't really now as I don't fry. i did try some in the halogen oven once with a bit of spray oil and they came out okish.

If you want to make a lovely side-dish out of it, you can add some onions, bacon, cheese and egg to it for a nice accompaniment to pretty much any meat dish works for me anyway! Kind of like a leftovers omelette
