There are a couple of American cake recipes I want to try, but they include something called "Butter Flavouring"
What is this, and what can I use in this country ?

A quick google - If it is a sweet recipe then just use vanilla instead or substitute some of the shortening with real butter. If savoury, simply use butter.

The only time I've seen butter flavouring in a recipe is for 'buttercream' icing made with shortening (Trex), to achieve a bright white icing. This type of 'buttercream' tastes nowhere near as good as one made with butter, so clear butter flavour can be added for flavour. Wilton make clear/colourless butter flavour, I've tried to buy some but always unsuccessfully. I'm sure, even with the butter flavour, the shortening buttercream will still taste very inferior to the real stuff. But I still want to try.

Here is the recipe for "Butterbeer Cupcakes", which includes Butter Flavouring in the ingredients.

Butter Flavouring is a U.S product usually added to a to either fake the flavour of butter when using a substitute or increase the butteriness without increasing the fat content, or possibly just reduce the calories..
