Fresh trout!

My dad has just caught a nice trout, I was going to stuff it with lemon, parsley, chilli and garlic, and then stick it on the BBQ. Any other suggestions?

Yeah, don't go too mad with the stuffing - very fresh trout has a delicate flavour. I'd leave the garlic out, you're in danger of overwhelming the fish.

What you plan to do with it sounds perfect to me although I'd have chilli or garlic not both. I think you run the risk of killing the taste of the beautiful fish.

Just polished it off! Stuffed it with lemon, celery leaves, and a little chilli and then served it with home made potato salad. It was delicious.

Sounds yummy It's my favourite fish to eat.
One of the ways I cook it is from a Keith Floyd show years ago. He was at a fish farm and asked the lady running the place how she cooked hers.
(I think he was expecting some fancy recipe from her.)

She said she washes it well then wraps it up in a sheet of newspaper like a little parcel. This is soaked under the cold tap, and then squeezed gently to get rid of the dripping water. Then place this straight onto the middle shelf (NOT on a dish) in a moderate oven. I use gas mark 5. Then cook until the paper dries out, my oven takes about an hour or just under.

When you take it out and unwrap it, the trout skin will stick to the paper and come away.

That sounds like a fab idea! I'll try that next time. I think it's best not to mess with the lovely flavours of fresh fish too much so that recipe sounds lovely. I was thinking maybe salt baking would be nice too?

I'd add as many flavours as possilbe, to disguise the taste of the trout!

Like many freshwater fishes, it tastes earthy and unpleasant, in my opinion.

I've had fresh trout fillets from the supermarket............I bunged it in the microwave

it was fine..................and no mess

Pellet fed farmed fish and those horrible mutant rainbow trout that trout fisheries buy in do taste dry and earthy but a fresh naturally feeding trout has a different taste and texture.

Freshly-run salmon or sewin (sea-trout) are the only tasty freshwater fish imo.... and that's only because they spend most of their time in the sea!
