When Paul said he'd give him half the club it was for after Ste made all the money Paul needed. Giving him the job is to enable him to deal, after Mercedes caught them in the previous episode, so I presume the half the club deal still stands.
The conversation in the alley tonight was with Paul still trying to persuade Ste to deal in the club, but Ste saying not if it meant he was going to be caught up in Maul's domestics. Paul grabbed him and shoved him, but then acted a bit apologetic.
