Beetrot as a snack
Today I bought a beetrot (the cooked vacuum packed sort) into work and had it as a lunchtime snack.
Anyone else like to share snack ideas? |

Personally, I love the stuff although I've never thought of having it as a snack. A colleague used to have beetroot and cottage cheese sandwiches, which always sounded rather tasty. As for workplace snacks, here are a few I've had in the recent past: Hard boiled egg(s) Carrot sticks and hummous Carrot sticks and a minipot of philadelphia Cottage cheese + pineapple/kiwi fruit/peaches/whatever fruit I have to hand Olives or olives+feta (I buy a big pot from the supermarket and divide it out into teeny tiny tupperware boxes) I've been known to chomp on half a cucumber as a snack before - very refreshing in this sort of heat. Frozen grapes work well as an alternative to sweets, especially in warm weather. If I'm feeling peckish in town I'll nip into a supermarket and buy a couple of slices of ham or chicken or some other such meat for a snack, rather than a chocolate bar or bag of crisps. Cupasoups can be quite feeling and great as a snack in the winter if your workplace doesn't have a microwave for real hot food. Another winter warmer - instant porridge. You can buy the single serving sachets which are quite expensive, or make your own. I have a large tupperware tub, fill it with instant oats and mix in powdered milk - much cheaper, free of most of the chemicals and you can add your own flavourings to it if you want. I've also used the graze boxes in the past. They're a bit expensive for what they are, but you at least get variety and it's a bit of a surprise as to what you get each week. |

I had beetroot as a snack and when I went for a wee my urine was bright red, scared the life out of me. But I like beetroot and cottage cheese with pineapple, nice with salad.

beetroot is delicious.............pickled or straight
I buy them in jars pickled..............sometimes I get a vacuum pack with 4 in, but I'm not sure if they're pickled or not ? Are they fresh ones, cooked and ready to eat but not pickled ? |

I never liked the standard pickled beetroot. Always tasted earthy and the vinegar wasn't nice.
I now lookout for sweet pickled and baby beetroot. |

I love beetroot with grated carrot and a drop of sesame seed oil and a teaspoonful of roasted sesame seeds. Sometimes put some sea salt and black pepper in it too. Delish!

Waitrose do a "Sweetfire Chilli" beetroot cut into wedges. It is absolutely delicious as a snack.

Homemade houmous with 3/4 chickpeas to 1/4 beetroot is lovely - you can adjust the percentages to two thirds chickpeas to a third beetroot too. Lovely
