Slow Roast Pork

I always just whack it in the oven on a very low temperature for a very long time, with just a bit of oil and salt.

Always delish (for the family - I'm veggie!) but wondered if anyone's tried a good variation just to jazz it up a bit for a change.

Not too spicy for the kids please!

What about "Slightly more quickly roasted pork"? Same ingredients but cooked at a slightly higher temperature for slightly less time.

Put it on a bed of mixed root veg, (onion, parsnip, parsley, swede, carrot, garlic, thyme, rosemary) and add a little stock or water. Cover tightly with foil and cook for 4-5 hours on low. Shoulder is good as it has a high fat content. When done, take meat off the bone and discard fat then set meat aside. Add a little more stock to the pan with the veg. Bring up to a simmer then tip all the veg and liquid into a colander and scrunch it through getting all the goodness out of the veg. Simmer until you have the consistency you want, season, and there is the best gravy you'll ever have.

Brine it for a few hours, use fennel as a basis for any rub, low temp cooking at 170C & using a meat thermometer to to get it slowly to 77C.
I cooked using this method last night.... best pork I've ever had.

One of the best pork dishes i've seen. Haven't got round to making it yet though.

But sometimes there is nothing nicer than pork in the oven, cooked on apple and onion. The apple and onion make a lovely gravy
