In Need of Vegetarian Sandwiches/Wraps
Hi all, I need to call on you again for suggestions on vegetarian sandwiches or wraps, but also no egg! So egg and cress is out.
Can anyone help? Many thanks.

Hummus (sp?!) and rocket/mixed leaf wraps - Tesco does little tubs of different flavoured hummus. Cream cheese pinrolls are nice wee bite sized wraps. Cheddar and red onion on wholegrain is simple but always good.

How about griddled halloumi with salad and some sweet chilli sauce?
Or roasted beetroot with hummous, salad and pumpkin seeds. Or cubed cheese, celery, apple, pineapple mixed into a bit of mayo. |

You dont have to give up the 'egg mayo sarnies, you can make the completely dairy and egg free, with silken tofu, a good vegan salad cream or mayo depending on your tastes, and of course a pinch of salt and pepper and a large handful of cress.You can add'vegg' if you can get hold of it, it tastes just like egg yolk and gives it an extra kick.
One of my fave weekend afternoon snacks. |

Roasted Mediterranean veg with herby cream cheese.
Hummous with grated carrot and pickle. Salad with salad cream or mayo or garlic and onion dip |

Humorous and falafels are great in wraps especially with some roasted peppers and avocado.
Falafels are also pretty easy to make yourself if you're feeling adventurous

If you have access to a good wholefood shop or Holland and Barrett with a fridge, it is possible to get really decent 'meat' substitutes now, if you are comfortable with these. I've just had a lovely vegan 'beef' sandwich myself! They also have really nice mushroom and spicy tofu pates. Hummus is a huge favourite and another good choice to add moisture and texture is avocado.

A mixed pepper hummous with caraway seeds.
A grilled vegetable sandwich with sundried tomato aioli. A pesto sandwich is tasty. A tofu sandwich with avocado. A walnut and tofu salad sandwich A portobello mushroom sandwich with pesto or sundried tomatoes An avocado and spinach sandwich. Chickpea and artichoke heart sandwich A chard and beetroot sandwich. Sauteed green beans and chard sandwich. |
