Vinegar on Fish & Chips

In september the British Superbike Championship comes to our local race track for the second year in a row. That means a lot of British motor racing fans will come to the official camp site run by my football club.
As I visit Britain regulalry, our head of catering - a recently retired head chef - asked me about the vinegar that goes on the Fish & Chips. Last year guests asked for vinegar, but we Dutch don't put vinegar on chips. We prefer mayo and (curry) ketchup. This year our chef wishes to give the punters what they want. But I've never had vinegar on F&S.
I know it's malt vinegar. But what are the brands to look out for?

In Scotland in the west of the country (Glasgow) it's salt and vinegar that's favoured on chips, but in the east side of the country (Edinburgh) it's salt and brown sauce.

I do like mayo on chips, but I also like the curry ketchup you get abroad

IMO salt and vinegar is good on chips, but only salt on fish

I like salt and mayo on oven chips but salt and vinegar on chip shop chips.

Goto a cash and carry and buy a big jug of malt vinegar or more likely (and cheaper) non-brewed condiment.

Most people will be used to those.

Never, never,NEVER put salt and vinegar on fish and chips, or on anything for that matter ...





















... you should put vinegar and salt on instead to stop the vinegar dissolving the salt.

Good old Sarsons I'd say, though to be honest any supermarket malt vinegar will do

I love the vinegar that comes with pickled onions, instead of malt stuff. Maybe its the fact its had the onions in it, but it tastes so much better.
And of course I have to finish a jar of onions within a week, I love them! I shall look like a onion soon, good job they ain't fattening.

I always put vinegar on first followed by the salt so that the salt sticks to the chips. I find that the salt slides off dry chips.

I do that but not because of anything to do with dissolving the salt (hadn't really thought about it that way) but because if you put salt on first, and the chips are relatively dry (as they should be) the salt just falls all the way through to the plate / paper / whatever they're in

Vinegar on first, makes the chips "wet", and then the salt sticks to the chips instead of falling straight through.

That was exactly the reaction of our chef when the guests asked for vinegar. Mad dogs and Englishmen.

And I will tell our chef to get steak fries as they are the closest to your chipped potatoes.
And to keep them soggy...

Next time I'm in Britain I will try the salt & vinegar (or vinegar & salt).

I have a method for salt and vinegar on chips. I put salt on the vinegar then more salt

With the brown sauce always being heavily watered down with vinegar, so we essentially get all three.

And I will tell our chef to get steak fries as they are the closest to your chipped potatoes.
And to keep them soggy...
Perfect, apart from the last line. I've never came across anyone who likes soggy chips. Crisp on the outside, soft and fluffy on the inside is the way to go!
