As it was his time stream she stepped into and the fact he was dying at that point time his time stream ended there so he was the last incarnation until she fixed things so there were no future Doctors to see

She also hadn't seen Hurt, so presumably she saw only those the Great Intelligence chose to attack — and who knows what his criteria were?

No, his timeline ended there before the Great Intelligence did anything to mess it up. She supposedly just fixed what the GI did, but who knows what consequences that might have had on the Doctor's future?
Clara must be the best-prepared companion ever in terms of a pending regeneration. From either the classic or new series. Although I guess she knows what happens but has never been at an actual regeneration, so it might still be a bit of a shock for her.
Mind you, Sarah Jane had been at the 3rd/4th Doctor regeneration - but I bet it would still have been a shock if she'd been there for one of the 'new Who' explosive regenerations.
I think she saw all eleven. She said something along the lines of 'I've seen all of you, eleven faces - you're the eleventh Doctor'. She didn't recognize Hurt's Doctor.
Well, she literally says that she had only seen 11 Doctors: "I saw all of you. Eleven faces. All of them were you. You're the eleventh Doctor." She did got to see the Hurt Doctor after that though.
I think the implication was that she only saw the Doctoras up to 11 (+Hurt) and didn't see 12 or later incarnations. The answer as to why could be that as both the GI and Clara entered the Doctor's time stream during 11's time, the Doctor actually died in his 11th self before Clara rescued him and therefore there actually were no future Doctors after 11 at that point.

I wondered why she had only seen 11 - I think that's a really good explanation. I guess it would also explain why his 'tomb' is the current console room!

Maybe she hasn't seen them but possibly has heard them. When she was in the Tardis library, she knocked over a bottle, could she have heard a future Doctor/ Doctors?
