Do you keep yours in the fridge? and risk the oil solidifying, and how quickly do you use yours? I think it says on the jar 'consume within 3 days'.

In the fridge, yes and they can be there for months on end. I've never had any problems.

I've had a jar in the fridge for over a year. I use one fillet every month or two. They are congealed in the oil.
They're fine.


You can also freeze them if you've opened a tin.

I keep them in a kitchen cupboard. I get 250g jars which last me ages, and they keep perfectly well without refrigeration. I've been doing this for years and no one has died (well, not from eating the anchovies anyway!)

Degsy - you should use more anchovies!

Most savoury dishes are improved by an anchovy or two you don't really need a recipe. Pound one up to add to salad dressing (goes very well with tomato/mozzarella salad). Chuck in a couple when you're frying onions for onion gravy or a ragu sauce.

They're fine to be kept in a cupboard. Although I have to admit that once I've opened a jar, it doesn't take that long to empty it....
