Healthy vegetarian salad ideas

I'm trying to eat healthier, but salad tastes so bland, and a lot of these salad dressings are high in calories.

Are there any easy to make salads any can inspire me with? I'm bad when it comes to cooking in general, everything I try and make never tastes that great.

Lambs lettuce and chard. Salad dressings you can make yourself.

A good dollop of dijon mustard
Some balsamic vinegar
Juice of 1 lime
1 mango pureed
Your favourite herbs

Mix together with a fork.

Peacock Vegetable Salad (Very colourful)
2 red onions, cut into eighths
2 small yellow squash, cut into 1/2-inch strips (I use butternut squash)
1 sweet red pepper, cut into 1/2-inch strips
1 yellow sweet pepper, cut into 1/2-inch strips
1 green pepper, cut into 1/2-inch strips
4 cloves garlic, thinly sliced (or to your taste)
2 teaspoons fresh parsley, minced
1 teaspoon balsamic vinegar
1 teaspoon olive oil
1 teaspoon dried oregano
1/4 teaspoon salt
1/4 teaspoon pepper

Place first 7 ingredients in a large bowl.
Combine parsley and next 5 ingredients in a jar; cover tightly and shake vigorously.
Pour over vegetables and toss well.
Spoon vegetables in an ungreased 13x9 inch baking dish, and bake at 425F/220C for 20 minutes, stirring every 5 minutes.
Serve warm, or at room temperature.

Quinoa Greek Salad (this also is good with Chickpeas instead of Quinoa)

2 cups vegetable stock
1 cup quinoa
1/2 cup red peppers, diced
1/2 cup green peppers, diced
1/2 cup cucumbers, diced
1/4 cup green onions, diced
1/4 cup black olives
¼ cup red onions, diced
3 ounces reduced-fat feta cheese (substitute veggie cheese)

Dressing
1/4 cup lemon juice
2 tablespoons olive oil
1 teaspoon minced garlic
1/2 teaspoon basil
1/2 teaspoon oregano
Pepper

In a saucepan, bring stock to a boil.
Stir in quinoa. Reduce heat to med low and cover.
Cook 15 minutes, until liquid is absorbed.
Transfer to a large bowl and cool.
Stir veggies and cheese into cooled quinoa.
Whisk together dressing ingredients.
Pour over quinoa mixture and toss.


Waldorf Salad


Note: I use 4 different varieties of apples to give it some diversity and added halved white, red and green grapes.

5 cups unpeeled apples
2 1/2 cups chopped celery
1/2 cup chopped pecans
1/2 cup chopped walnuts
1/2 cup skim milk
2 teaspoons low-fat mayonnaise
2 teaspoons apple cider vinegar
2 teaspoons sugar
Salt and pepper

Place apples, celery, and nuts in a large bowl.
Mix together milk and mayonnaise.
Add cider, sugar, salt and pepper to cream mixture.
Pour over apples and mix well.
Chill until serving time.

Asda sell a Maggie brand Tamarind Sauce called Tamarina which is great on salad.

I started eating more salad recently and I must admit I find a traditional tomato, lettuce and cucumber salad with a touch of French dressing to be plenty interesting, but probably because I've ignored most salad for so long that I'm not used to it.

Add an avocado to that and it would be yummy

Peel and chop up a ripe mango.
Chop up a red onion, a couple of roasted red peppers (in a jar from Lidl) add some fresh, chopped coriander and some fresh, chopped mint. Sometimes I add some chopped up pineapple. Put in container in fridge until ready to eat. Yum!

3 bean salad.

As for dressings, Tesco do a "light choices" range, Asda have the "Good for you" ones. Sure other places will do similar if they're not near you.

Some kind of pear/ walnut/ Roquefort combination with plenty of green leaves? If you use a really strong cheese it will go a long way and you won't need very much, so it will still be quite healthy.

Sorry, didn't mean you ate just that. We had it tonight with boiled rice and I made some minced pork brochettes. it's also lovely with gammon, ham, steak etc.
