Why did Bryan Kirkwood not kill off any other of the actresses characters who wanted long breaks?

It wasn't like that. Like Barbara Windsor, Pam quit but hoped not to be killed off sos he could return one day.

But they decided to give Pat the best send off was to kill her off (and tbf it was amazing TV at the time) as letting her leave was to similar to Babs exit only a year or so before.

There was noting amazing watching Derek Branning being mean to Pat on her death bed!

That and Tanya's involvement was the one downside.

Pat and Ian, Pat and Janine, Pat and David. David, Carol and Bianca... And then eventually Simon! It was spectacular. Really character driven drama draped in history.
