My nanna makes something that I call crumble cake and I love it. She makes a basic sponge and while that's cooking she stews some apples with a tiny bit of sugar and cinnamon. When the sponge is ready and the apples have cooled, she makes a crumble topping, puts the apples on the sponge and the crumble on the apple and bakes until the crumble is cooked. It's so good!

We've had a bumper crop of apples this year too. Apple crumbles and pies are always top of my list, and I'm going to try a Tarte Tatin this year too. I made a big batch of stewed apple this weekend (just chopped apples, cinnamon and a bit of brown sugar, cooked until soft but not mushy) for the freezer. I use this for small individual crumbles (I use raw apple for larger crumbles generally). I love the stewed apple with Greek yoghurt, or warmed up with a bit of vanilla ice cream. I'm also making some apple sauce for the freezer - as above but without the cinnamon and probably no sugar, as I like a sharp apple sauce to go with pork.
Like the sound of Babycakes's crumble cake! |

Crumble cake is my favourite cake ever, especially crumble cake and custard!
Also, I make a toffee sauce with sugar, water and a tiny bit of cream and cook the apples in that. Makes a lovely topping for a New York style cheesecake |

Crush apples in a fruit press until all the juice is out of them (a juicer also works). Put the juice in an airtight container with an airlock and some yeast. Leave for 6 months. Drink. Fall down.
