Do any of you preserve chillis?
I have four varieties all maturing.
Does anyone out there preserve them in either oil or vinegar? If so, can you share your methods. Freezing and drying I'm fine with. |

I have before. I sliced up some standard green chillis and put them into a jar with some corriander seeds and garlic.
I filled it with a teaspoon of salt & sugar, a splash of vinegar and topped up with boiling water. No recipe. I just had spare chillis so gave it a go. They lasted for ages, just like the ones you get in the supermarket so I guess I got the measurements right

I had a glut of de cayenne one year. I can't recall the exact recipe, but I found it via google. It was pretty simple - spirit vinegar and sea salt. Boil the jars to sterialise, then pack with chillies and cover them with the hot vinegar & salt.
They tasted just like the shop bought ones ![]() But shop bought ones are dirt cheap so I've never bothered growing large quantities again. |

You can use them to flavour oil for cooking. Just decant a bottle of any kind of oil, stuff whole chillies into the bottle, and refill. Put back into the dark cupboard. After a few months, use the oil as normal.

Eventually though the garlic and the whole chillis start to turn. Thanks for replys, all

Please be aware that fresh produce stored in oil is not preserved unless canned/bottled or frozen. Either dry the produce thoroughly first or make pickles and jams instead.

On a similar note, you can put a few chillies into a bottle of cheap sherry to make chilli sherry .....
Not for drinking but a splash added to stews, sauces, gravies etc will add a bit of oomph.Having said "not for drinking", try knocking back a little if you have a heavy cold - helps clear the passages. You can dilute to taste, or add some to a toddy. |

you can do the same with vodka - good for bloody marys or shots
