What am I doing wrong?

Every time I try to fry beef (such as strips for a stir fry) it always ends up almost stewing in a pool of its own juices and not being fried in the oil.

Is it because I use lean meat which isn't particularly good quality? Or is it bad pans?

I always make sure the oil is hot, but it keeps happening.

It sounds like the pan is not hot enough or cools too quickly.

Bring the meat to room temperature before frying. Fry in small batches and keep it warm.

I agree with the above advice. Make sure you do the following:

Bring the meat to room temperature.

Heat the pan well before adding oil.

Don't salt the meat (draws out moisture)

Don't stir the meat about or move the pan about - both lowers temperature and encourages meat to stew. Once in the pan leave meat well alone, just carefully turn once browned.

Don't overcrowd the pan. If you've too much meat for a single layer with gaps, fry in batches.

There are a few options.
Get a good wok.

If you're using 'stir fry' beef then you can tenderise it by using a meat hammer and/or by marinating it (pineapple juice works well)

If you have the money use fillet.

Use a coating of cornflour & water, or if you have a spare egg white add that in as well.

I always take meat out the fridge well before I want to use it, especially something like beef. Had Ribeye last night cooked rare but made sure it was out the fridge a good hour before I cooked it.
