As a rule,
Saturday - elemental, poached egg and bacon muffin. Sunday - Bacon and egg sandwich. We may, as a change, have eggy crumpets with birds eye chiles, bacon and maple syrup

Generally either poached or scrambled eggs on toast. Tomorrow will be scrambled with smoked salmon (got some trimmings to use up). Yum!

One of the days either eggs Benedict or breakfast casserole. The other day I take or leave as I do during the week.

What's breakfast casserole?
Tear up some stale bread and cover it almost to the top but not quite. Brown off some sausages - cheapos do well. Chop them up into bite size pieces and scatter on top of bread. Dice some onion and scatter it all over. Dice a pepper… (Add anything really, chopped bacon, black pudding etc.) Scatter over some grated cheese Slice some tomatoes to put on top. Whisk up half dozen or so eggs with some milk and season it. I add dried sage usually. Pour it all over the dish Let it soak in (can prepare the day before or immediately) Bake in oven til set (about half hour to 40 mins) Leave it for 5 mins or so to cool a bit. Slice it up. Delicious hot or cold. Should look something like THIS |

I'm never up before midday at weekend so on a Sunday it's a Sunday roast at my in-laws. On Saturday it's just whatever we've got in, usually beans on toast or a bacon sarnie.

I still rarely eat brekkie on the weekend. I tend to have an early lunch. If my husband is home (every other weekend) we will have a bacon sarnie around 11am.

I almost never manage breakfast on a weekend, either because I don't get up in time or I'm hanging.

Saturday - peanut butter on brown toast and some fruit.
Sunday - kippers on brown toast but after reading this thread I will add a poached egg. My local Sainsburys now stocks taste the difference kippers, beautiful - so meaty and no bones. £2 for 4 kippers - bargain. |
