Christmas dinner for 11 - help
I've suddenly got 11 turning up for Christmas Dinner this year. I'm pleased but panicking. I only have one single oven and three burners on my hob. So, any tips please?

Get yourself an electric steamer if you don't have one. Apart from the roast potatoes you could do all your veg in that. They are not that expensive and steamed veg is just lovely. That would keep your cooker and hobs free. If you are doing sausages wrapped in bacon you could precook these and then warm them up just before everything is ready. You can made gravy and bread sauce ahead of time too unless you are making the gravy from the juices of the roast.

Your turkey/whatever meat you are cooking will need resting, so cook that first to be ready at least an hour before you want to serve. Take it out of the oven cover it with tin foil and a couple tea towels/hand towels and leave it. This will allow you to have an empty oven and you can turn the temperature up to cook the potatoes etc. The turkey will stay hot if covered for a good 2 hours, if not more.
Prep all the veg the day before. |

If you are having mashed potatoes make them the day before and just reheat in the oven when you are roasting pots and parsnips. Red cabbage I'd do the same. If you have a microwave do your sprouts and carrots in that. If you are having a bird you sould do it the day before but better on the day itself. Certainly if I was having a ham or something with it I'd do that the day before.
Prepare as much as possible the day before and have it all ready to go. Do not do everything yourself. There's lots of hands there to help. Use them. Don't go wild with the bubbly before the meal is to the table. Time takes on another dimension with fizz.

Prep all veg the day before and make the gravy. Xmas morning cook all veg except spuds, put in serving dishes covered with clingfilm. These can be microwaved just before serving. Then you only need to do the turkey and spuds in the oven along with the sausage wrapped bacon and use just one burner to warm the gravy through. As Jackie said, the key is to get as much as you can knocked off well in advance. Do that and it's a breeze.
