I think he struggled with the task more than he let on but put a brave face on it because by keeping his reaction minimal, he knew he would be much less likely to get voted to do the next one. You could see his facial expression during the task seemed forced, like he wanted to express his discomfort but knew by doing so he would be giving the producers the footage they wanted to set him up for more trials, so he held it in. This would also explain why when he returned to camp he was confident it would be Joey next time.
Matthew's clever, not fake. There's a big difference. Joey meanwhile's just bad at being thick.
