Any favourites ? Here's some of mine...

Scarlet Rivera on Dylan's 'Oh sister'...

Velvet Underground 'Venus in furs'...

Best of all though I loved Lucy wilkins solo at the end of 'Out Of The Blue' on the Roxy Music reunion tour - it's like the best orgasm ever in musical form lol...

Isn't Venus In Furs a viola, rather than a violin?

Out Of The Blue is the first thing that came to mind when I saw your thread title. Although Lucy is great, I can't help but prefer Eddie Jobson's original. Here live in 1974. Stunning http://www.youtube.com/watch?v=b9QpI3wVvek

And the original recording

Darryl Way played some good violin solos (imo) back in the '70s with Curved Air:

Melinda (more or less):

I thought that Sonja Kristina was (& still is) gorgeous (imo)

An odd one, but I love the use of violin/strings at the beginning of Fall Down by Will.i.am featuring Miley Cyrus. It's the best part of the song.

Also Jóga by Bjork has a really really beautiful string section in it.

Any thread about the use of violins (and various other stringed instruments) in pop/rock surely has to include a mention of the Electric Light Orchestra!

Violinist Jean-Luc Ponty did some excellent work with Frank Zappa - not sure whether it's pop, rock or classical?

... and many more on YouTube. Ponty recorded an album of Zappa's compositions, very good it is too but it's firmly in the jazz-rock bracket.
