Both the Matt Cardle thing and the hook up with fans rumours (and the phone call with the fans that you linked) happened quite some time ago, when everything was still new to them.
And I have no problem with Harry keeping it cleaner or not wanting to talk about whether is is an ass or boob man. If he realises that his mom or dad or grand parents (or younger kids even) might watch the interviews, and it leads him to a certain behaviour & it's fine with me. I suppose to certain people it might seem disingenous. To me it just seems like someone who wants to keep more things private than the fans would like (which I have no issue with) & someone who realises just how far his words can reach.
I personally find some of those PC answers very charming, especially the way he delivers them, but I understand that some might not 
I think Harry gives an insight into the kind of person he is (he is a nice guy, he isn't confrontational but he seems smart, patient & able to deal with pretty tough situations). However, he doesn't want to share certain things, either because, like you think, he is too media trained, or because, like I think, he doesn't want to over-share (for whatever reason).
Harry is almost 20 & has a private life that I don't think we know anything about (we didn't even realise that he was "homeless" & crashing at friends untill Spurlock mentioned it).
Since the problem seems to be his private life and the fact that he doesn't chose to share anything about it: maybe he hooks up with many girls based on their looks solely, maybe he just has regular sex-friends based on their looks (and personality?), maybe he really is a lot less active than we imagine... Fact is we don't know & we assume, just like the gossip outlets.
And I find it unfair that Niall's happy-go-lucky "I don't have any GF and haven't for 3 years" isn't probed quite as much by fans as Harry's private life. But like ImperfectPearl said, Niall seems to be in this bubble, and the fans seem to somehow think he can do practically no wrong. Not that I think he is doing anything wrong BTW, but the difference in expectations about being forthcoming about their private lives irks me.”
The hook ups w/ groupies and the rating of girls were happening during summer tour last year and Harry was already going on w/ 'we don't objectify women' before then - they happened concurrently - it wasn't out of personal growth. And I guess we have to agree to disagree - I'm having a hard time taking 'I'm a personality kinda guy' seriously from a guy who hooked up w/ groupies - something that couldn't be based on anything other than the physical.

so disagree w/ you that the interest in his private life is bc he doesn't choose to share anything about it. All his relationships so far are w/ fellow celebrities: a much older TV personality, a super famous singer, and a reality show celeb from a notoriously self-promoting family. Media attention is a no brainer. In fact, as I said in a previous post, I believe his last 2 relationships bring the PR angle very much into consideration. He may not talk a lot about his relationships but w/ the exception of Haroline, he conducted them in a very public way. I think it was Lady Gaga who said that when you have money, if you don't want to be seen then you definitely can. We have seen that w/ Harry - he managed to disappear when he wanted to. But he went into Taylor's hotel everynight thru the front entrance w/ throngs of media there and then left in the morning thru the front entrance as well carrying his night kit

In fact one of the reasons so many people think Haylor was just a publicity stunt is bc of how public it was. And as I'd mentioned too I don't think it's a coincidence that the TV channel hosting the Kardashians' show has also been promoting 1D up the wazoo.
If privacy is such a concern to Harry, he wouldn't have agreed to any of these. It doesn't give anyone a license to invade his privacy ofc but you can't say that the interest in his private life just happens for no reason. I personally think he's remarkably PR savvy - he's very good at having people project onto him whatever they want him to be. The media hails him as a modern lothario bc he dates and hangs out w/ models and other celebs, which raises his profile w/out hurting his reputation bc we're living in sexist society in which men are admired if they have a long list while women are slutshamed for the same thing (see how admiringly GQ wrote about him in its article while Taylor was shamed for being a serial dater). And he only needs to say the "right" things now and then for the fans who desperately don't want to believe that he gets around to make their own assumption about the image they have of him (remember the reactions to the GQ article: 'Harry isn't a whore! He's a cupcake forgodsake!!', 'Harry isn't up all night getting lucky! He spends his time making vines and hanging out w/ old people and his stylist's baby!!' LOL). The truth is likely somewhere in the middle - I doubt he slept w/ anywhere near 400 women LOL but I don't think he's living a monk's life either.
I'm not making him to be a bad guy at all and it doesn't mean he isn't really a very nice and polite young man he seems to be. There's no shame in being media savvy if being in the limelight is where you want to be. He himself had actually said that he liked the attention when asked by a pap if he minded it - I admire his honesty and self-awareness there and I'am glad for him personally bc then he wouldn't be made unhappy by it. He said he wanted to do this for the rest of his life so it's actually a very good thing that he's so remarkably savvy and good at being famous. Remember that time they were pranked by a woman pretenting to be in labor? After he found out it was a prank he remarked that it would've been such a good publicity for 1D if it was real. He thought that while thinking they were delivering a baby for real, but it doesn't mean he wasn't being sincerely nice and helpful. It's possible to be both nice
and savvy.
