Eggs, ideas
Hiya,
My local shop was selling off eggs dated 14th for 9p per half dozen. I bought 5 boxes. Any ideas what I can do with them. I have basic cooking skills down, but never attempt anything difficult, though that's not to say I wouldn't try if something were suggested that sounded delicious. I have come up with: eggy bread pancakes (savory with veg and cheese; sweet, with sugar or melted choc) fairy cakes cookies omelette We're a household of two, sometimes three, but the third is only sometimes into eggs. |

Break them into heavy duty freezer bags, expel the air and freeze them. Use them to bake, scramble, omelette etc when you need them.
I'm a big lover of breakfast casserole and that uses up a fair few. Fritattas are also a good option. |

Breakfast Casserole
Grease a shallow baking dish with butter, maybe an inch or so deep. Tear up some stale bread and cover it almost to the top but not quite. Brown off some sausages - cheapos do well. Chop them up into bite size pieces and scatter on top of bread. Dice some onion and scatter it all over. Dice a pepper… (Add anything really, chopped bacon, black pudding, haggis etc.) Slice some tomatoes to put on top. Whisk up half dozen or so eggs with some milk and season it. I add dried sage usually. Pour it all over the dish Let it soak in (can prepare the day before or immediately) Scatter over some grated cheese Bake in oven til set (about half hour to 40 mins) Leave it for 5 mins or so to cool a bit. Slice it up. Delicious hot or cold. Serve with baked beans, potato wedges, fried potatoes, bubble n squeak etc (or you can boil and slice potatoes and put it in the casserole) Skill Level = nil Basically put in anything you want. Sometimes I'll add sliced potatoes if I have leftovers. |

Egg Salad
Deviled Eggs Hard Boiled (left unshelled in the fridge they will last longer to use in salads, etc, or make egg salad by portions.) Baking!

Eggs will last well after their date. If you want to check before use, just crack into a bowl before adding to whatever you are making. If it doesn't smell, it's fine.

hairy bikers bacon and egg pie.
Lovely hotwith veg or cold the next day. Tip - make sure you roll the pastry nice and thin so it's not too heavy. |

lemon curd, the lover loves this, but I've never tried to make it. Any simple fave recipes?
(I know I could google but it's nice to share and be given tried and trusted methods) |

Here is the classic eggs benedict recipe http://www.bbcgoodfood.com/recipes/2...-eggs-benedict that can be tried and very nice it is too. Alternatively, you could also try the really up market variant of this recipe, eggs Cumberbatch, where the ham is replaced by pancetta ham, where truffle shavings are shaken on to the hollandaise sauce and finally where a teaspoon of caviar is then put on top of each individual serving. |

Egg and ham casserole. Place slices of ham in a greased pan. Top with as many scrambled eggs as you wish, that has been mixed with shredded cheddar cheese. Can add green pepper and onion as well. Or mushrooms. Bake at 350 degrees until the eggs are set. Delicious.
