Chicken Wings-Not For Me.
So I'm in the US at the moment and wings with buffalo sauce seems to be quite popular over here. I've never eaten a chicken wing but they look quite nice from what I've seen. Tonight I order some and they come with some chilli sauce and some ranch sauce on the side. They also come with some sticks of celery, not sure why.
Right, so the menu says chicken wings coated in seasoned flour and deep fried until crispy. They were indeed crispy to look at and they felt crispy too. But on biting into one (and it was friggin hot!) the coating was crispy but the skin underneath was soft, and if there is one thing I can't bear it is soft chicken skin. The bar staff were great and wiped it off my bill. Still glad I tried them but won't bother again. I worked out that because they were coated in seasoned flour this protected the skin from crisping up so although the flour crisped up on the outside the skin didn't. Everyone else in the place were scoffing them down but not for me I'm afraid, in fact I felt more than a little nauseous afterwards.

I love Buffalo Wings, especially with Blue Cheese Dip. Perhaps you just had a bad lot. Who knew Buffalos had wings either?

Buffalo wings are the greatest bar food next to Jalapeño poppers. Deep fried chicken wings coated in Frank's hot sauce and butter, dipped in blue cheese- not ranch- has to be blue cheese. Alchemy.

ewww.. soft chicken skin is wrong.
try cooking some when you get home. Basically marinate the chicken wings overnight in your fav BBQ sauce (I make my own), then roast them in a hot oven for at least 20-30 mins (cook til they are cooked!). Lovely BBQ crispy skinned chicken wings without a soggy skin in sight!! nom nom nom nom nom

The peri peri wings in our local Coop are really nice but there is hardly anything on them, i only sometimes buy them when they are half price @ 75p for 4 but even that is a bit much. Much better off buying the plain ones at Farmfoods or somewhere like that and adding your own sauce before putting in the oven but i am trying to keep off that type of stuff at the minute.

Apparently authentic Buffalo Wings shouldn't have a coating, be it just flour, pannee or a batter.
If you're going to try them at home then consider brining them. I find it helps the skin and gives the chicken more flavour. Not just with wings but with chicken pieces for fried chicken and even whole birds for roasting. |

I used up about 10/12 of them yesterday making my gravy for Christmas Day.
It's in the freezer now. Made the same last year and it's delicious. http://www.jamieoliver.com/magazine/...et-ahead-gravy |

You sound like the typical nightmare customer.
Why was the food wiped from the bill? There was nothing wrong with it you just didn't like it. I wouldn't normally reply to such ignorant posts but I thought I'd make an exception in your case. Merry Christmas.

Surely the skin should be crispy underneath?

I love chicken wings. Hooters in Nottingham do an all you can eat on Mondays. It's £7.99 and you get 7 at a time. You can have different flavours. They are great. The restaurant record is 115 I managed 45 lol. My fella has to have the boneless ones but they are not all you can eat. My favourite are the Daytona yum yum

My thoughts too. Too much effort and mess for a mouthful of meat.

whenever i see people eat chicken wings they seem to finish with just the bones like it's been attacked by maggots.
I'm not able to extract that much meat. |

Maybe it should be, never having had them before but the consensus seems to be that they maybe shouldn't have a flour coating which must stop the skin from crisping up.

We've had roast chickens during the past month but I've been skinning them and removing the wings then cooking the wingless bird in a roasting bag |

Depends on the size of the bird but some wings are quite juicy and substantial but I wouldn't choose wings if I was eating out.

The best buffalo wings are flash fried without a coating and then tossed in a mixture of melted butter and Tabasco. As kitchen lore has it the celery and blue cheese dressing on the side were the original garnish as the bar staff in Buffalo NY where the wings originated were improvising when the kitchen got swamped.

I've done the Jamie's gravy but used 6 wings with a chicken carcass.

We've done it before but we've not skinned it. Do you skin it for health reasons? |
