Help: Vol-au-vents
Hey guys.
I'm doing a party for family on Christmas Eve and I'm going to cook vol-au-vents. I'm using shop brought cases to save time and effort. I need some ideas for fillings, please could you help me out! |

So far I've decided on:
1) Mozzarella & Tomato 2) Chicken & Stuffing 3) Cheese & Onion Mix 4) Crab Meat Mix 5) Egg Mayonnaise & Cress 6) Onion, Mushroom & Peppers I'm looking for possibly 2 or 3 more filings. We don't like mackerel or asparagus, so they're out of the question. |

Chicken a la King is my favourite followed by creamed (garlic) mushrooms.

I find the deli fillers are quite good, chicken n sweetcorn, chicken tikka, cheese and onion kinda thing
I also like to do prawn cocktail ones, just stick prawns with seafood sauce, although not loads of sauce. I cook the cases usually the day before then add the filling at the last minute, this stops them going soggy. Good luck! |

Tuna and cucumber mayo with a dash of lemon/lime (you could crystallise some zest with chilli to go on top).
Char-grilled steak and honey-mustard (or horse radish) Roasted peppers and hummous Chicken, bacon and cracked black pepper mayo Cottage cheese and pineapple Bacon, cheese (something light like wensleydale/feta) and cranberry. Smoked salmon and cream cheese (again with a hint of lemon or lime) - or if you want to get really creative, try salt curing your own fillet of salmon - it's incredibly cheap and easy and lets you flavour with dill, whiskey, the list is endless: http://www.bbc.co.uk/food/recipes/homecuredsalmon_66103) I'm doing vol-u-vents too, but I'm just going to leave the fillings on the table, with the cases next to them. Along with some crackers, melba toasts and salady items - that way people can just have at it! |
