Christmas food prep
How are you getting on foodies? I haven't even started yet!
Tomorrow I'm going to make my two types of stuffing: sausage, sage, apple and onion and port infused cranberry, chestnut and bacon. Will also make my cranberry and port sauce and probably broccoli and Stilton soup. Will put all these in the freezer ready to defrost overnight Christmas Eve. Does anyone else like to prep early? I'd be lost otherwise, will never find the time next week! |

My prep will be to make a chicken jalfrezi at some point in the next few days, and then stick it in the freezer until next Wednesday. I will have to cook some rice on christmas day, but it's a sacrifice that I'm willing to make.
(Note: my browser tried to correct "jalfrezi" to "Alfred", so perhaps instead we will have Alfred for our christmas dinner.) |

I've done my pud (strawberry and baileys cream roulade) which is in the freezer and I plan to do my gravy on Sunday (we're going to have roast chicken for dinner and everything we don't eat will go in the stock pot). Plan to prep all my veg etc and cook my meat on Xmas eve - fingers-crossed I'll have it all done

The mash, red cabbage and cranberry sauce are made and frozen as of yesterday. The soup will be made this afternoon.

Make sure your mash is quite dry before you freeze it - add milk etc later. I let mine defrost and them microwave it. Also do the same with jacket potatoes but micro from frozen.
