For those who make their own do you leave your mixture to stand for a few minutes/hours or do you prepare it and use the mixture straight away?

I put mine in the fridge until I'm ready to use it, for at least half an hour.

I find if I leave it for around 30 mins to an hour I get better "rise".

Best recipe I've found is in the Forgotten skills of cooking by Darina Allen.

Thanks guys. According to Delia she sees no point in letting the mix stand, which I have normally followed, but I will let it stand for a while now.

My yorkshires normally come out okay, but I would like to get a better rise, so I think leaving it out may do the trick.

Final question. Is it best to leave the mix in the fridge or out at room temperature?

I prefer stodgy yorkshires and hate the crispy Aunt Bessie types so I make my mix and pour in straightaway.

I leave mine out at room temp as I think it helps any yeast reaction occur.

I always give mine a shot of cold water and mix after letting stand.
