Saddle of Venison, cooking tips please.

I impulsively bought some Venison today after seeing it served up in a restaurant last night.
It looked so good that I thought that I would give it a try.

The last time I ate that meat was about 30 years ago and I can not even recall if I liked it or not then.

I am a good enough cook and I am keen to try it out with the family.
I have looked online for recipes and have seen loads.
Has anyone a personal recommendation for an online recipe on how to do it please.
Something with a nice gravy/sauce/jus with it.
