I want to buy an espresso machine after years of using a caffettiere. I like drinking rich, dark coffee.

Alas, my budget is small, and whilst ideally I want a Gaggia Classic, I'm looking at

But my question is,what is it about a plastic body on an espresso machine that makes them so inferior to a stainless steel body? How will it affect the quality of the coffee, which in my mind, will be most influenced by the quality of the beans.
