It's funny how these things stick in the memory. When I was a student the Chinese takeaway down the road did a lovely chicken in chilli and garlic sauce, and in the twenty years since I've never been able to replicate it properly.
What I would really like to eat right now is one of the cold chicken dishes from the
Sichuan cookery book that my wife gave me for Christmas, but I don't have all of the stuff I need. Tomorrow will be dedicated to finding an oil thermometer and a suitable preserving jar so that I can make chilli oil!
