Had a rather bad time of it in the kitchen this afternoon

firstly cooked Lemon drizzle muffins .. as per recipe on the BBC Good Food site. This was to use up leftover lemons from christmas
Ignored the 20 percent reviews warning me what was to come but looked with positivity at the 80 pc singing their praises.
Ended up with cakes that took 4x the cooking than stated in recipe, if you didn't want a raw middle, and cakes which could not be handled and fell apart from cases even when cold.?
The lemon drizzle element was like water and although tastes nices would never have coated a muffin even if it had stayed whole.
Now Need a recipe for some kind of eton mess type recipe using lemon sponge instead of merengue ... any ideas anyone.

Went on to make the ham and blue cheese quiche from same site ...not good.
Feel I've wasted time and money in my kitchen this afternoon in an effort to avoid food waste.
Tried to log on to the 'Good Food' website to add my review but it was loke trying to join the secret service, was taking forever and my irritation level was already depleted by their crap recipes.
NOT HAPPY.

You don't need a recipe to just mix cake, meringues and cream, probs a bit of lemon curd too. It'll be lush whatever happens

If you have leftover lemons in future, cut them into wedges, pop in a freezer bag and freeze. Lovely in a G&T!

I've frozen all our leftover lemons and limes in wedges for drinks

How frustrating, hope you managed to make something delicious in the end. Sometimes I wonder why I spend so much time looking for recipes for meals that are gone in 10 minutes. Life is just too short, well I have been told mine is.
