Deep fried rocket

I had some leftover rocket which has been in the fridge for over a week and a bit past it's best.

As I was having a stirfry last night I decided to experiment and put the deep fat fryer on max.
A couple of handfuls of rocket into the oil and 10 seconds later I had crispy seaweed.

I thought it might be too delicate for the process but even though it was quite delicate it was very good with a bit of knorr seasoning and five spice powder.

I've done the same with kale before also.

Might have to give that a try. I wonder if it'd work with spinach too as I always end up with leftover spinach as the bags are huge and a little goes a long way!

My daughter has made crispy kale by the oven method.

Appanrently a good way to crisp up herbs is to put them between clingfilm and microwave them.
Seen top chefs doing that on tv.
