Why doesn't Cheshire cheese melt?

I love chips with cheese. We usually get vintage Cheddar or Red Leicester but my dad buys Wensleydale so when we stay there at weekends I often do us cheesey chips and it makes great chips because unlike Cheddar it doesn't go like rubber so we've come to prefer it.

I went shopping this week but they didn't have any Wensleydale so opted for Cheshire cheese which is still a crumbly cheese same as Wensleydale is. However it just won't melt. Had it under the grill and it started to burn before it would melt. So I tried it in the microwave and after 2 mins it was just about starting to melt but by this time my chips were beginning to overcook. Why wont it melt? This doesn't happen with Wensleydale but they're both crumbly cheeses so I can't understand why.

Halloumi is another non-melting cheese. Presumably it is something to do with the fat content, but no idea really.

Cheddar should melt ok - was it low fat by any chance?

Try lowering the grill pan, it might take longer to melt than your usual cheese, but it will given time.

It wasn't cheddar he was trying to melt, it was cheshire

Ah ok - well the fat content is about the same.

So again, wonder if it was a low fat version? Perhaps it was also heavily chilled?

Lowering the grill pan, or raising the grill, should get it melting without burning, just will take a bit more time.
