A UNIT spin-off? No. It wouldn't work. People would be finding the show boring. It would feel too much like SJA or TW.

Plus, we had a lot of UNIT during JP's days as the Doctor. Whenever I watch a JP DW story, it feels more like a UNIT spin-off anyway, but with the Doctor popping up every now and again.
