Fish and stir fry's

Hi,
I have some unbattered frozen fish (will be defrosting first of course)that I wish to add to stir fried vegetables and noodles.I would like to serve it in 1 inch pieces with the vegetables, and serving the noodles separately.
How do I do it so the fish stays in small 1 inch pieces without breaking up into millions in the wok?
Would I be better off battering them in the small pieces and serving them that way?

The sauce for the stir fry is sweet chilli, so it would work that way. I would however prefer the fish to be left alone and not batter if possible.

Just add the fish for the last 2 minutes. You don't want to overcook it.

A couple of other suggestions
Cook the fillet whole (fry, grill, oven bake) and then portion it up when cooked and add to the sauce at the last second.


Batter the fish nuggets and deep fry them - as you would in sweet & sour chicken/pork.
