Vegetarian Dishes

Although I eat meat sometimes, I prefer vegetarian dishes, I love homemade Falefels and hummus and I love to try new middle Eastern dishes and various other cuisines with ingredients that are easy to find,

I've started this thread to get some new ideas or just to find out your favourite vegetarian dishes , feel free to share tips, recipes,what you have eaten at home or maybe from street food and restaurant s either in your home town or abroad.

or you can get it as a ready meal from ASDA. I have one in the freezer but haven't tried it yet so don't know how it compares to homemade.


I made it several times last year and not only is it one of the best veggie dishes i've made it's one of the best dishes overall.

I tend to use up all my veg by making a veg curry
which lasts me for 3 or 4 days......

At the moment I've got half a cabbage, some carrots, some cucumber, an onion, half a cauli, some broccoli, a tomato, celery......I might just get some garlic and an aubergine tomorrow and make up a panfull of curry.....

I might eat it 4 days running but I've got a secret hint.....before serving up I stir a spoonful of different indian pickles through it........might be chilli pickle one day, hot mango the next, brinjal the next......

That adds a different flavour to the same curry each day...

I chop up fennel, tomatoes, aubergines and celery. I add spices according to mood. Bung them into a copper bottom pot and cook them until they are a mush.

They can be put into filo pastry or croissants with some chopped up hard boiled egg and cheese and cooked for about half an hour.

My recipes usually come off the net now although I have loads of veggie cookery books. Even Delia has veggie recipes on her website - try Rose Elliot's site.

Lentils make loads of really tasty, really cheap dishes. Boil some with some carrots, onion, garlic and potatoes. Add some curry powder and garam masala at the end and you've got a curry!

Boil 1 cup of lentil with 2 cups of stock until the stock evaporates. Chop 1 small carrot, 1 medium onion and 1 stick of celery as thinly as you can (pref use a food processor - don't let it go mushy though!), add 1 cup of rolled oats, some italian herbs and 1 tbsp of soy sauce. Mix together and bake at 180C with no cover for 40 minutes. - a lentil loaf! Serve with steamed veggies and gravy!

Red lentils are extremely cheap! Tesco have 2 x 2kg bags on special for £5. A lentil loaf would work out at less than a quid to make, and could easily feed around 6 people.

This makes a lovely, easy tagine sauce and you can substitute the lamb with something else.

Gnocchi in creamy tomato and spinach sauce, topped with mozzarella and baked.
Cook the gnocchi. Put in an ovenproof dish. Pour over a tin of tomatoes and some cream. Microwave the spinach. Add to the gnocchi and tomatoes and stir around. Top with mozzarella and parmesan so the sauce and gnocchi is covered and bake until mozzarella looks browned and cooked.
Mushroom roast, to have with roast potatoes etc
Cook onions in butter or oil with garlic until softened. Add mushrooms until they are softened too. Add breadcrumbs. Add a small amount of vegetable stock so that it's not too dry, if needed (or water to loosen). Season, if the stock's not enough. Then add grated cheddar. Mix in one or two eggs and put into loaf tin and press down. Bake until cooked (brown and a knife goes through)

Quick dahl:

Fry an onion and garlic in oil with curry powder, garam masala or your favourite curry paste or a spice mix you've made if you can be bothered. Add lentils or lentils and split peas and water. Boil. Add small tin chopped tomatoes. Add crumbled veg Oxo cube. Add some spinach, lots of coriander and chopped mushrooms. Cook until it is ready and add water if needed. Serve with chapatis or sauted potatoes. (Obviously stir all the way through process)

Interesting that a couple of the links there just say 'parmesan' as an ingredient which doesn't make them vegetarian.

Depends if they specifically state that the recipies are vegetarian. I've made the same dish with pepperoni and pancetta which a veggie would obviously leave out.

But Parmesan isn't vegetarian, which is what I think the other poster was getting at.

I actually own a vegetarian cookbook which lists has parmasan as an ingredient in several recipes which I've never understood.

I think that recipe above has been labeled wrong. I know it says it's a veggie dish in the description but the fact it's got parmesan in shows it isn't a veggie dish.

On the Quorn website they used to have a recipe for shepherds pie using Quorn mince however the recipe called for Worcester sauce. They did have a disclaimer stating that because of this it wasn't a veggie meal but I thought that was slightly odd considering who it's main target audience is.

You can get veggie "Worcester sauce" http://www.thehealthbay.com/worceste...FVDLtAodiGsAVQ , I'm not sure what the rules are regarding calling it Worcester sauce.

I've tried a different version and it was pretty good though it's so long since I've tried the real stuff (I'm vegan) that I can't make a valid comparison.

Henderson's Relish is vegan. It's an alternative to Worcestershire sauce.

I've not seen it around here though so would probably have to order it online.

Tesco sell a form of vegetarian hard cheese , similar to parmesan.
I like lentil bolognaise, vegetarian chilli, pea and mint tortilla.Not really a recipe (just something I've chucked in the oven) is chopped mediterranean veg (red peppers,courgettes, red onions etc), some little new potatoes, tossed in olive oil, garlic and herbs. Roast for 30-40 minutes, then add some crumbled feta and pop back in the oven for 10 minutes or so. Very nice and healthy!
Forgot to check if feta cheese is vegetarian, as I am only vegetarian for taste reasons. If not, I am sure there will be a similar type of cheese that works just as well.

Like you OP I'm a meat eater, but my partner is veggie, and many of our friends a vegan or veggie.

One of my favourite things to cook for them is dim sum style - because I love them myself

If you have patience they're a joy to make, look great, and the ingredients aren't hard to source from the Chinese and Japanese sections of any supermarket.

Sui Mai:
Quorn chicken style pieces,shitake mushrooms, cabbage and spring onion, water chestnuts, all very finely chopped and fried with 5 spice, sesame oil and ginger. Stuff wonton wrappers leaving open at the top and steam.

Potstickers or gyoza:
Tofu (or any meat substitute), and again your choice of finely chopped veggies, fried with sesame oil and hoisin sauce. Wrap in gyoza wrappers in closed Cornish-pasty style dumplings and fry in a saucepan in a little oil. You can either have like that or throw a small amount of veg stock in the pan at the very end and put the lid on just for a minute or two to get a beautiful fried and steamed texture.

I could write a book on all the variations etc but you get the idea!

Biona Organic worcester sauce is vegan and available in Health Food stores!

1)Sliced cheese placed on lightly toasted bread then grill until cheese is molten.

2)Same as 1) but PUSH THE BOAT OUT: add some Worcester Sauce to the molten cheese.

3)Eat like a king!
