How do you stop potatoes and veggies from sticking on the tray when you roast them?
I've been cooking some potatoes and other veggies in the oven lately, basically what I do, is that I cover them in oil and then I do the same with the foil which I use to place over the baking tray. Yet still, the potatoes stick to the foil after I finish cooking them (about 20mins in the oven). So how do you stop them from sticking?

I don't use foil for a start. High temp and turn regularly.

Why are you cooking potatoes and other veggies in the oven at all? It is surely more economic to cook in a pan - unless you are doing roast in which case you wouldn't use foil.

Don't just pour oil over the top. You need to coat the veggies in the oil.
You can do that in the pan but if you're apprehensive of doing that then put them in a big mixing bowl with the oil and seasoning and give them a good toss around to coat them all and then transfer into the hot cooking tray. |

Grease the tin thoroughly before starting, and keep turning the spuds during roasting.

olive oil ..i use a bit over the top and turn them over now and then ,,works a treat

I wouldn't use foil.
I use a non stick roasting tin from Sainsburys. I pop the potatoes and vegetables into a bag and cover in oil and give a good shake until oil covers all ingredients. I bung them into a pre-heated oven. I get a spoon and turn them over so they cook evenly. |

I place mine in a ceramic dish, or a baking tray, squirt them with oil, season them, jumble them around with fingers to get them all coated, bung them in oven and turn them occasionally.
I wouldn't put them ON foil as I'd expect them to stick. |

Pre-heat the oil/fat of your choice in your roasting tin in the oven, par boil your spuds. [But don't use Olive Oil for roasting, it eon't go hot enough]
Drain the spuds, shake in the colander, add to hot oil and baste. Perfect roasties. But the main thing is preheating the oil, that way they won't stick |

![]() One of my favourites is roast Mediterranean salad - peppers,courgette, onions, olives, tomatoes with feta cheese and fresh herbs. Believe me, it wouldn't be the same boiled! |

I don't use any oil when cooking. I just pop the plain potatoes (or add any herbs you like etc) on an unoiled stick-free baking tray. I just use the cheap ones from Tesco. Doesn't stick at all. When I used to use tin foil, I found it always stuck. Quote:

When I used to use tin foil, I found it always stuck. Roast sprouts with a little bit of salt and pepper are AMAZING also! Btw, for foil lovers - baco foil does a non stick foil now. I bought some Xmas time, it does work |

As others said, never use a foil base, use a roasting tin, use it several times until its 'seasoned' as you do with cast iron frying pans and don't over clean, just wipe clean. Shake or turn the veg several times during cooking and don't use too much oil or they will 'fry' during cooking instead of essentially moist baking/roasting which is what you want. How you cut your vegetable is important, a long strip of veg with a fat and thin end are not best, the thin end will over cook so where you can try and cut uniform thickness.

Le Cousances style Le Creuset dishes make lovely crispy roast potatoes, if you get the fat or oil really hot before you put the potatoes in, they never stick.

Le Creuset are fine pots/dishes/pans, I have pretty much the full range but these days I rarely use them to be honest. Modern non stick pans from the likes of Tefal and good quality stainless steel pans have for me at least made Le Creuset all but redundant in my kitchen
That said I imagine the pots will out live me by a good few years lol.
