Rocky Road - which biscuit ?
I've not done Rocky Road before.
Which biscuit is best to use - I've seen recipes that use Rich Tea biscuits, and other recipes use Digestive biscuits. |

I use Rich Tea and Tesco Value ones at that. If you use good quality chocolate I don't find the quality suffers for using a cheaper biscuit.
My recipe I use is 125g unsalted butter 300g dark chocolate 3 tbsp golden syrup 200g Rich Tea biscuits 100g mini marshmallows plus a handful extra. Melt butter, choc and syrup Bash up biscuits Mix biscuits into melted choc Add marshmallows Tip into 9 inch square tin and smooth down with a wet spatula Dot the top with the extra marshmallows and push down Chill for at least 2 hours in fridge. I've no idea how it tastes as I'm a veggie so don't eat it, but it goes down a storm at every cake sales I do it for. I sometimes substitute half Oreo cookies and that gets rave reviews. |

I've used Mars bars and shortbread fingers in my version (well Hairy Bikers!)

I use Digestives, Asda Smart Price.
I also chuck raisins and glacé cherries in mine. |
