Rules for cooking defrosted sausages?
HI,
I bought some sausages from Costco, and on day of purchase cooked half and froze the other half. (delicious btw. caramelised onion and pork, highly recommended) At that time they had a week to go to the use by date. Anyhoo, heres my question. I defrosted them yesterday morning and they have since been in a fridge at 3c for 24 hours. Will they be ok to cook now? Sounds a daft question but I have only ever cooked straight after defrost

Yes they will be fine - it's been 24 hours.
Put them on some paper towel for a bit to soak up any moisture as that might cause a bang when you come to fry them. |

Are people too paranoid when it comes to freezing/defrosting and cooking?

Not only sausages, but even chicken breasts etc. I know it's naughty. I just wrap them in foil on a slightly lower heat initially then open the foil and turn the heat up.And re: a comment further down, I didn't know it was JO's way, to oven cook sausages, but I think sausages and bacon come out much better baked than fried. No oil required, no careful turning and watching. Simply bung 'em in and await the crispy loveliness

To be honest I've always cooked straight from frozen regularly and it's never caused me any problems.

I cook sausages straight from freezer all the time without problems. Just lower the temp a bit and cook for longer to stop them drying out too much. I can also recommend Aldi specially selected range, seriously meaty. They were on offer last week and stocked on a few packs.

you can cook sausages from frozen, like burgers, also. just give them a bit longer. We grill mainly, but oven is fine.

I cook straight from frozen on the George Foreman. They come out the same as from defrosted.
