Sauces, Dips, and general sloppy stuff!
Can you beat a bit of béarnaise?
I use it on everything from the usual steak and chips to in sandwiches, with pasta... basically I use it a lot! What's you favourite sauce or 'wet stuff' and do you use it in unconventional ways?

I use houmous in place of any form of butter/marg - Vegemite neat on toast - çaçık ( yoghurt/ cuc/ garlic dip) even. Anything I can make low fat & garlicky & herb like! A red tomato paste my Turkish MIL makes is lovely too - then there's either very low fat cream cheese mixed with sweet roasted garlic.

I went through I phase of using houmous prolifically but managed to turn myself off of it for a while, so I don't do that now ![]() Cream cheese is definitely another biggy I use in place of butter, for quick sauce on just about anything, and slap on most things ![]() What got me thinking about this was my friend's shock at me putting béarnaise on bread - apparently she only uses things in their typical ways, e.g. tartare with fish, gravy on roasts, salad dressing on SALAD??! That last one drives me bonkers, salad dressings are for spreading on bread in the main here - not salads

All you mention are lovely but very high in fat!
![]() You can substitute some of the oil in homemade houmous with warm water if you're blitzing. A simple half fresh creme fraiche with herbs/ garlic is a great use. Then I make my own fresh tomato/ herb sauce blitz - no fat if you choose to use fat free yoghurt. Bake/roast half sliced garlic pulp mixed through fat free youghurt/ half fat gmcreme fraiche / yoghurt etc - gives a savoury smoked taste. Lovely! |

Mmmmm love bearnaise sauce.
My favourite 'sloppy addition' is sweet chilli sauce. I used to add it it everything but I've calmed down a bit now because I'm quite conscious of how much sugar is in it. But I used to have it on pasta, rice, salads, plates of vegetables, stir frys. I also used to make salad and rice or pasta lunches to take into work that always had a big dollop of pineapple cottage cheese and a generous drizzle of sweet chilli sauce. Then for tea I'd have something like salmon and roasted sweet potato and butternut again with the obligatory pineapple cottage cheese and chilli sauce. In my head I think I thought it was really healthy because it was low in fat totally oblivious to the immense sugar content. I love sauces. The sloppier the better for me! |
