Costa Mocha Cooler
Anyone have any idea how to make these?
I've just made one and while it taste similar, it seems to have separated, drink on the bottom and ice blend on the top. I used ice, semi skimmed milk, sugar, drinking chocolate and an espresso shot. |

I tried to make these type of drinks but could not get them sweet enough! I did see some powder mix at Bookers last year but did not get it as it was £20. I wish I did now. I asked a guy who came in my chippy in a costa uniform he said that it was the powder that added most flavour and sweetness. They just added milk or coffee and ice to make it cold.

You need an emulsifier. Xanthan gum will do the trick. http://www.dovesfarm.co.uk/gluten-fr...s/xanthan-gum/
Sainsburys has it. |

Sainsburys has it. I've watched them make them and they get a shot of espresso, milk/cream? Ice and chocolate syrup/powder and blend them together. I did ask what chocolate they used and one women said powder because the syrup separates the drink, but I've just had one made with syrup and it was fine. |

Cheers. So where in the process at Costa would they add this?

If you do get it, you only need a pinch to get a good consistency. |

It doesn't look like it. Costa and the like will have their mixes formulated especially for them.... but if you didn't want to buy the xanthan gum especially, you could look at the instant drinking chocolates. They'll probably have some sort of thickener in them.
