How to get perfect oven cooked Lamb chops.

No one likes Lamb in our house, except me, so i plan on oven cooking a couple of lamb Chops for myself but i haven't a clue how to get them nice and tender, not pink.

Anyone with a fail safe recipe for the perfect chop.
I plan on having them with mash, carrots and peas with gravy and plenty of mint sauce.

I would say you would have trouble getting nice oven only cooked chops.

You could use the grill. You want to give them some kind of sear on the outside.


My method would be to use a griddle pan on the hob.

You could also start on the hob in a griddle pan or oven safe frying pan and then transfer to the oven to cook through.


Lamb chops shouldn't take that long to cook though.



You might be better off buying a rack of lamb to cook through in the oven then cut into chops when cooked.
Even then I would give it a sear on all sides before transferring to the oven.

Why not invest in a slow cooker, and cook lamb chops/steaks etc in that?
It will be beautifully tender, and you will never want to use the main oven for meat again.
I cook all my meat in a slow cooker, whenever possible.
Simple, can't go wrong.

Except you can't do a nice rare fillet steak that way. Griddle pan everytime, and lamb should be slightly pink - it's juicier that way.

Yeah, but the OP has said he doesn't want pink lamb. Everyone likes different things after all. Me, I'd nearly eat a steak straight off a live cow's bum. I'm very keen on rare to blue steak.

That said, a slow cooker is definitely a good idea for tender meat, but personally I think lamb chops are a bit too fatty for that to be nice, and I know I want the fat to melt a bit and get crispy, so I agree with you about a pan being the way to go.
