What goes with fish free paella?

I am going to make a meat paella using chicken and chorizo.

Anyone recommend a wine to go with it and also what else should accompany a meat paella food wise?

Crusty bread?

I have no idea.....

I shall be cooking this in the garden on a Scandinavian Cadac. A sort of very large gas wok.

I'd probably have a ZInfandel, a Cabernet Sauvignon or a Rioja. I'm no wine buff it has to be said.

I'd either have a few light tapas before the paella or have a very simple salad with it. No bread.

I'm sure you couldn't go wrong with a good aged rioja. I also think brut cava would be good for balancing the salty chorizo.

As it's a rice based dish, I'd avoid offering more starch like crusty bread. If I were you, I'd have for a starter some machengo cheese, olives, marcona almonds if you can find them...

Don't you mean "and" rather than "or"?
You gotta have crusty baguettes!!

Try this - key in paella for suggestions then key in chorizo for suggestions.
You should find a common denominator.

Heh, the crusty bread got me thinking about an old friend from Zaragoza who, I believe, eats it with every meal. I don't know if it's a Miguel thing or a Spanish thing, but he is absolutely lost without a baguette to help shovel in the food.

Whenever I attend a formal dinner the crusty bread roll is my starter before the starter.
Can't resist.
Gotta have garlic bread with an Italian.
Gotta have naan/chapati with an Indian.

I live in Spain and we always get crusty bread with Paella.
