The only thing wrong with all these set-ups... is the fishcakes!
Do you like them? I find them dry (however much you try to moisten them when binding). Also an unpleasant 'bitsy' texture. I would guess a UK style would be with potato and breadcrumbs. I've seen a lot of US crabcakes just binded with mayo and maybe just a little breadcrumbs/crackers. Thi fish cakes sometimes use blitzed seafood as the binder |

A good tip is to soak a crustless slice of white bread in milk for a few minutes, squeeze the milk out and add the bread to the fishcake mix. Works with meatballs as well.
Might work with rissoles too.... as they're also prone to being dry and crumbly. |

I would serve them with peas (I like the birds eye garden peas ) and tartare sauce. Maybe a bit of broccoli or a few runner beans if I want the extra veg. but definitely no more potatoes.

Because they already have potato in them. Can't really imagine wanting to eat 2 lots of potato's in one meal.

If I was having the other type (thai type) I definitely wouldn't put potatoes with them. |
