Rib of beef - help please!
Frankie_Little

My sister brought round a rib of beef she'd got in Aldi half-price, and as she and her partner are off on holiday, she's given it to me. But I'm a minimum wage earner, living off chicken, mince and occasionally pork, and I have never cooked beef. I don't want to ruin it, as even half-price it was expensive!! I've got friends coming for dinner tomorrow and would be ever so grateful for some cooking suggestions. Thanks in advance.

Is it bone in? And how much does it weigh?

The bone is in it, and it's 3.6kg.

Ok. Oven up as high as you can. Cut a couple of onions in half and place in a roasting tray - put the beef on top. Cook at top heat in the oven for 20 mins, then turn down to 160/170 and cook for a further 2 hours, basting 2 or 3 times. This will cook it rare-ish. You can cook it for longer but tbh that's a waste of good rib. Leave it to rest for half hour before serving.

Thank you so much!!

Just to add, don't cover it when cooking - and only loosely cover when it's resting. Enjoy!

I cook my rib roasts really slow on a really low temperature a la Heston. I heat my oven to 60 degrees C and then cook the rib for about 5 hours and then rest it for an hour. It's always completely delicious and on the rare side. Enjoy! What a lovely treat!

Depends on how you like the doneness.
Ofcouse you could cook it rare and slice it and if need be flash the slices through the oven to cook them more.

Or nip to the shops and buy a meat thermometer.
