Mushroom sauce ?
Having seen John Torode make Mushroom Sauce on Masterchef, I decided to have a go, but it's more like mushroom SOUP
![]() I fried the mushrooms, added chicken stock and then creme fraiche, and blended until smooth. I did it from memory. It didn't look like Johns ! |

Too much liquid. The recipe on the BBC food site doesn't call for stock, it says in the instructions to add some of the reserved chicken poaching liquid, but doesn't say how much.
You could try thickening it with a beurre manié. |

Reduce it over a very low heat?
Hopefully the cream won't split. |

Well, I ate it and it tasted okay. It was a light beige colour, which I'm sure isn't right !
I also did home made gnocchi and the chicken. If I do it again I will bear in mind what you guys have said

It didn't look like Johns ! 20g/½oz unsalted butter 1 tbsp olive oil 1 shallot, chopped 2 garlic cloves, chopped 200g/7oz chestnut mushrooms, sliced 15g/½oz dried morels, soaked and drained 28g/1oz dried ceps, soaked and drained 150g/5½oz crème fraîche salt and pepper For the mushroom sauce, heat the butter and olive together in a frying pan until melted. Quickly cook the shallot and garlic until just softened. Add all the mushrooms to the pan along with some of the reserved poaching liquid. Cook for five minutes, then remove from the heat and stir in the crème fraiche. Transfer to a food processor and blend until smooth. Check the seasoning and add salt and pepper as required. Set aside until ready to serve. |

Is that really the recipe John did ? I haven''t looked it up or anything !
