Seeking veggie ideas

It's not that I have meat every day anyway but I've a veggie coming to stay and my brain is somewhat paralyzed by the thought.

If they eat quorn there is recipes on the quorn website, or adapt your normal recipes

Leek pudding – It’s basically a similar to a steak suet pudding. You make it with veggie suet but you put leeks in the pudding instead of steak. Also use the water from boiling the leeks to make the best gravy you have ever tasted. It's real comfort food.

Leeks are good and you can do things like add them to macaroni cheese and cauliflower cheese. Another good thing with both of these recipes is to add fine breadcrumbs on the top of the dish before you cook them to give them a really crispy topping.

Here's one easy and very quick recipe that always goes down well (not that you need easy, of course!):


Gnocchi in mascarpone and tomato sauce, with spinach, topped with mozzarella and baked in the oven

Cook gnocchi, microwave spinach. Put gnocchi in baking dish, cover with sauce and add spinach. Mix it up. Cover with mozzarella and parmesan until golden. Serve with salad.

How about chilli, made with chickpeas and various beans, rather than beef? You can even put some quorn mince in.

Or a spanish tortilla (omelette), with some crusty bread

Pasta with pesto, or a basic tomato sauce and parmesan, coupled with garlic bread

Asda have some great frozen veggie none meatballs and mince meat as well as burgers (there are 8 in the box). The meatballs are especially nice in a pasta sauce with spaghetti.

Kitcheri is a lovely recipe. Serves 3

175g rice
175g lentils
25g buttter (or leave it out if vegan)
2 tablespoons coconut oil ((if leaving out butter)
1 onion
2 cloves garlic
250g carrots
1pt vegetable stock
1 tsp ground cumin
8 cloves
2 bay leaves
8 cardomon pods
1 avacado
1tsp cumin
2 large tomatoes
salt and pepper

1)soak rice and lentils in cold water
2)put butter/oil in pan and add onion,garlic and carrots
3)cook ten mins
4)add cumin,bay,cinammon,cloves and cardomon
5)add rice and lentils. cook 5 mins
6)add vegetable stock 1pt
7)boil and simmer 15 mins
8)add avocado and tomatoes and salt and pepper.

You can put in sweet potato/courgettes/cauliflower/mustard seeds/ fennel seeds/coconut milk.

Sorry parmesan and many other cheeses are non-veg, There are plenty of vegetarian cheeses if you dig around.

Most cheese sold in supermarkets is vegetarian: Cheddar, Lancashire, Double Gloucester, most other British cheeses, many mass-market European cheeses... It's the ones which are produced to a strict recipe, such as Parmesan and Grana Padano, which cannot be sold under the registered name if they aren't made with animal rennet.

Vegans don't eat any dairy at all.

Vegetarians don't eat anything that requires the death of the animal, which includes animal rennet. Some vegetarians MISTAKENLY eat non-vegetarian cheese because they aren't aware of rennet, and some eat it because they aren't really vegetarian.

Vegans do not eat veggie cheese. they would not be a vegan if they did. we eat vegan cheese which is made by soya milk.

By the way, there is a vegan parmesan you can get.

Stuffed peppers or mushrooms filled with ratatouille/rice, and vegetarian cheese and tomato ravioli go down well with my veggie daughters.

Would advise not offering fish to your guest at all. Not that you would, but some people mistakenly believe that it is somehow vegetarian.

I do shepherdess pie but use lentils.

There is no need to eat animal rennet. In England most cheese is vegetarian. These days one can even buy parmesan substitute. Twineham grange hard cheese is the best Vegetarian alternative to Parmesan Cheese. You can pick it up in loads of places and I think Tesco's now stock it nationally

Personally I don't know any vegetarians who eat animal rennet.
