Treated myself to a solo lunch yesterday after taking my daughter to the May 1 celebrations in Padstow, at the St Petroc's Bistro and as for pudding (which I don't usually bother with, but fancied it) I had Gooseberry Meringue. The meringue and whipped cream were straightforward enough, but I couldn't work out what had been done with the gooseberries. They were pale red/pink in colour and had obviously marinated in something or other. Anyone come across them or could otherwise stab a guess?
