What can I do with spinach?

Hey,
I have some spinach leaves in the fridge that I was going to use a vegetable to serve with dinner tomorrow - pork schnitzel I was wondering how I can prepare it and if I can combine it with anything (other than boiling it) as that sounds a bit boring Any ideas?

Do it in a wok/frying pan with some garlic butter. Takes less than two minutes.

What? Spinach is my favourite vegetable. I love it. Raw, cooked, it's delicious.
Creamed spinach is the bomb.

I often wish they would sell spinach in smaller bags - they're too big if you only want ¼ of that amount for a recipe. I often stir leaves directly into a sauce I've made for pasta, be it a creamy chicken and mushroom one, or a spicy tomato - the heat wilts it and adds texture and colour.

Either saag aloo (as pointed out above) or use it in the base of a fish pie.
I don't know why but spinach is absolutely delicious in a fish pie!

The simple Italian way. Cook it, add some extra virgin olive oil and some ground sea salt.

Gnocchi in mascarpone and tomato sauce, with spinach, topped with mozzarella and baked in the oven

Cook gnocchi, microwave spinach. Put gnocchi in baking dish, cover with sauce and add spinach. Mix it up. Cover with mozzarella and parmesan until golden. Serve with salad. Or giant shells on a bed of tomato sauce, stuffed with ricotta and spinach and topped witn a cheese sauce and mozzarella.

Or put it in dahl. I also make a spinach, mushroom and courgette lasagna, with one layer of each (spinach mixed with some cream cheese and spring onions, mushrooms in a mushroom sauce and courgettes in a tomato sauce).

I buy frozen spinach. It comes in little blocks and you can just take out the amount you need. It works out much cheaper that way, and it tastes fine in a sauce or curry.

I love fresh spinach! Really, really love it - I can eat a whole bag in one meal easily. I throw it in with pasta, or make creamed spinach, or have it in salads, or toss it with garlic and olive oil... all sorts.

I also do a puff pastry tart with spinach mixed with cream cheese as a bottom layer, topped with baby leeks and asparagus, with blue cheese dotted on top.

Yes, frozen spinach in a curry works really well. Just add it a few minutes before the end.
