Amen to this. Slimey, nasty stuff.
Since when is spinach as you describe? It would be very difficult to cook with and people would not put it into pies as the pastry would go very strange.

I do love spinach just wilted with some pepper on.

Also love it in other dishes.

No one should ever boil Spinach . You don't need water to cook it, just put it in a pan and let it wilt. Takes hardly any time.

Large handful of fresh spinach, big teaspoon of mayo, ground pepper and a little salt, a little lemon juice and half a chopped chili does it for me.

I would have used them in eggs Florentine.

I love spinach but it always leaves a funny texture on my teeth, whether raw or cooked.

I use it in curries and pasta if I have leftover, finely chopped. Or in cheesey mash, leftover potatoes, dab of cream or milk, last bit of cheese, pinch of salt and pepper..goes down well with the kids

Baby spinach, strawberries, sesame seeds and a dash of balsamic. Mix together and serve.

I adore spinach. I buy it frozen these days. I defrost, squeeze most of the water out and have it as a side, covered in gravy. Or I add it to my salmon pie mixture. Or mix with Creme fraiche, salt and pepper and serve that as a side. Lovely stuff, is spinach.
