The floury vs waxy thread reminded me to ask: what are your preferred varieties for roasting? I recently went to ridiculous lengths to get some king edwards, which I've always used (through habit, I suppose) and it occurred to me that there may be other options that are equally good or better.

Been using Desiree recently for everything and they're great.

You may not consider these for roasting, but sometimes I coat baby new potatoes in (a tad of) oil, garlic powder, salt, pepper and dried herbs, and roast them for around 45 mins. They are delicious. Obviously completely different to the traditional 'roast potato' as we know it, but it still makes a great (healthier) alternative if one is pushed for time or is too tired etc to make the proper stuff. They are like mini baked potatoes with a beautiful flavour all over.

I do the same for most BBQs I do.
A lovely side dish.

Really easy to do, too.
I put all the ingredients in a large bowl, and shake, before laying on non-stick paper-lined baking tray.

I roast all varieties of potato, but my favourite for traditional roast potatoes are Maris Piper or Roosters.

I've grown a good few potatoes over the years, trying rare and recherché varieties, but I've found nothing better than boring old maris pipers. They're popular and bestselling for a reason
